Food Preservation
Food preservation is an important task on the homestead. This allows us to eat our produce and our efforts, throughout the year. The two methods we use is freezing and canning.
Before all the items are processed they must be picked, cleaned, and checked for bugs.
Corn and Carrots are blanched then processed, placed into freezer bags, then flash frozen. Peppers and onions are usually diced up to be added to stir-fry's and other meals.
Tomato processing is done with a commercial motorized press, which removes both pulp and seeds, which can then be processed into spaghetti sauce or salsa. We also use this for slight cooked apples for making apple sauce.
Winter storage squash, onions and potatoes are kept in a cool dark place and will usually last into the new year.
Building a cold cellar may be a necessity in the future as our fruit tress mature and begin producing more.
